Squash Two Ways

I've been on an insane travel schedule lately, and my cooking has been mostly things I've done before, or consider boring, but this got raves, and was very easy, so...

Preheat the oven to 350. Peel a butternut squash. Cube it into about 1" cubes, and put them into a baking dish with some butter or oil, salt and pepper. Wrap 6 or 8 cloves of garlic in tin foil, add them to the dish. (No need to peel the garlic.) Cover and bake.

Melt about a stick of butter over low heat, and continue to cook until it browns. Pour into 2 ramekins or other small dishes. To one, add about a tablespoon of fresh ground cinnamon. Stir. Into the other, use a garlic press and crush the now-roasted garlic. Stir.

Seperate the squash into two portions, adding garlic & brown butter to one, and cinnamon and brown butter to the other. You end up with both a visual and a flavor contrast which is lovely.
